Paleo Plantain Waffles:
1/2 large ripe plantain
3 tablespoons coconut flour
1 tablespoon flax meal
1 egg
2 egg whites
Toppings:
sweet potato egg nests
avocado
micro greens
hemp seeds
tahini
Directions:
Blend all ingredients together until smooth. Pout into preheated waffle maker & cook according to instructions.
Top waffles with avocado, sweet potato noodle nests, hemp seeds, micro greens and tahini.
